Crispy, sweet and simply irresistible - the perfect accompaniment for autumn and winter days
Beat the butter and sugar in a bowl until light and fluffy. Add the egg and mix well. Gradually work in the flour, baking powder, cinnamon and salt until you have a smooth dough.
Wrap the dough in cling film and leave to rest in the fridge for around 30 minutes.
Preheat the oven to 180 °C (top/bottom heat). Line a baking tray with baking paper.
Form small balls from the dough (about the size of a walnut). Roll in a mixture of sugar and cinnamon and flatten the balls slightly.
Place the cookies slightly apart on the baking tray and bake for approx. 10-12 minutes until golden brown.
Remove the cookies from the oven and leave to cool completely on a wire rack.
The cookies taste particularly good with a hot cup of tea or coffee. For a special touch, you can mix chopped nuts or chocolate chips into the dough.
Have fun baking and enjoying! 😊
