Chocolate mousse

Airy, chocolaty and irresistible - a dream for anyone who loves chocolate



Ingredients (for 4 portions):

  • 200 g dark chocolate (at least 70% cocoa content)
  • 3 eggs (separated into egg yolks and egg whites)
  • 50 g sugar
  • 200 ml whipping cream
  • 1 pinch of salt
  • Fresh mint leaves and chocolate shavings to garnish

Preparation:

Melt the chocolate

Break the dark chocolate into small pieces and melt over a bain-marie or in the microwave. Leave to cool until it is lukewarm.

Whisk the egg yolks and sugar

Beat the egg yolks with the sugar in a bowl until the mixture is light and fluffy. Slowly stir in the melted chocolate.

Beat the egg whites until stiff

In a clean bowl, beat the egg whites with a pinch of salt until stiff.

Whip the cream

Whip the cream in a separate bowl until stiff.

Mix everything together

First carefully fold the whipped cream into the chocolate mixture. Then fold in the beaten egg whites in two portions until you have a smooth, airy mixture.

Cool

Pour the mousse into portion glasses or a large bowl and leave to set in the fridge for at least 3 hours.

Serve

Garnish with fresh mint, chocolate shavings and, if desired, a dollop of whipped cream.


Tip

For a special flavour, you can refine the mousse with a hint of orange liqueur or a few drops of vanilla extract.
