Mini quiches with spinach

Savoury and delicious - small quiches with a creamy spinach and cheese filling, perfect for any occasion.



Ingredients (for 12 mini quiches):

For the dough:

  • 250 g flour
  • 125 g cold butter (in cubes)
  • 1 egg
  • 1 pinch of salt

For the filling:

  • 200 g fresh spinach
  • 1 tbsp olive oil
  • 1 clove of garlic, chopped
  • 100 g grated cheese (e.g. Gouda or Parmesan)
  • 2 eggs
  • 200 ml cream
  • Salt and pepper to taste
  • Nutmeg (freshly grated)

Preparation:

Prepare the dough

Place the flour, butter, egg and salt in a bowl and knead into a smooth dough. Wrap the dough in cling film and leave to rest in the fridge for 30 minutes.

Prepare the spinach

Heat the olive oil in a pan, add the garlic and fry briefly. Add the spinach and allow to collapse. Season with salt, pepper and nutmeg. Leave the spinach to cool slightly.

Make the filling

Whisk the eggs and cream in a bowl. Mix in the grated cheese and cooled spinach. Season to taste with salt and pepper.

Roll out the pastry

Roll out the dough on a floured work surface and cut out circles that are slightly larger than the cavities of a muffin tin. Press the dough circles into the wells of the muffin tin.

Filling

Distribute the spinach and cheese mixture evenly over the prepared pastry cases.

Baking

Bake in a preheated oven at 180 °C (top/bottom heat) for about 20-25 minutes until the quiches are golden brown.

Serving

Let the mini quiches cool slightly, remove from the tray and serve warm or at room temperature.


Tip

The quiches are easy to prepare and also taste great cold. For an extra twist, you can add feta or sun-dried tomatoes to the filling.
