Mediterranean vegetable pan

Light, healthy and full of Mediterranean flavours - this dish brings the freshness and taste of the Mediterranean straight into your kitchen



Ingredients (for 4 portions):

  • 1 courgette, cut into slices
  • 1 aubergine, cut into cubes
  • 1 sweet pepper (red or yellow), cut into strips
  • 1 red onion, cut into thin rings
  • 200 g cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves of garlic, chopped
  • 1 tsp oregano (dried)
  • 1 tsp rosemary (dried or fresh)
  • Salt and pepper to taste
  • Fresh herbs (e.g. basil or parsley) to garnish
  • Optional: feta cheese or roasted pine nuts to finish

Wash all the vegetables and cut accordingly

Sauté

Heat the olive oil in a large pan or wok. Add the courgette, aubergine and pepper and fry over a medium heat for about 5 minutes until lightly browned.

Add the onions and garlic

Add the onion rings and chopped garlic to the pan. Fry for a further 2 minutes until the onions soften and the garlic is fragrant.

Tomatoes and spices

Add the cherry tomatoes and season with oregano, rosemary, salt and pepper. Mix everything well and simmer for a further 5-7 minutes until the vegetables are soft but still have some bite to them.

Serve

Serve the vegetable pan on plates, garnish with fresh herbs and add crumbled feta or toasted pine nuts to taste.


Tip

Serve the Mediterranean vegetable pan with fresh baguette, quinoa or couscous to create a full meal.
