Wash all the vegetables and cut accordingly
Sauté
Heat the olive oil in a large pan or wok. Add the courgette, aubergine and pepper and fry over a medium heat for about 5 minutes until lightly browned.
Add the onions and garlic
Add the onion rings and chopped garlic to the pan. Fry for a further 2 minutes until the onions soften and the garlic is fragrant.
Tomatoes and spices
Add the cherry tomatoes and season with oregano, rosemary, salt and pepper. Mix everything well and simmer for a further 5-7 minutes until the vegetables are soft but still have some bite to them.
Serve
Serve the vegetable pan on plates, garnish with fresh herbs and add crumbled feta or toasted pine nuts to taste.
