Spiced apple cake

An aromatic classic, refined with cinnamon and nutmeg - perfect for cosy autumn days or as a highlight on the coffee table.



Ingredients (for a springform pan with a diameter of 26 cm):

For the dough:

  • 200 g flour
  • 100 g sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg, freshly grated
  • 100 g butter (cold, in cubes)
  • 1 egg

For the filling:

  • 4 apples (e.g. Boskoop or Elstar), peeled and thinly sliced
  • 50 g sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

For the topping:

  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • 1 tbsp butter (melted)

Preparation:

Prepare the dough

Mix the flour, sugar, baking powder, cinnamon and nutmeg in a bowl. Add the cold butter and work into crumbles with your fingers. Add the egg and knead everything into a smooth dough. Wrap the dough in cling film and chill for 30 minutes.

Prepare the apples

Place the apple slices in a bowl. Mix with the sugar, cinnamon and lemon juice and set aside.

Preheat the oven

Preheat the oven to 180 °C (top/bottom heat)

Roll out the dough

Roll out the dough on a floured work surface and place in the greased springform tin. Raise the edges slightly.

Filling

Place the prepared apple slices on the pastry and spread evenly.

Prepare the topping

Mix the sugar and cinnamon and sprinkle over the apples. Drizzle over the melted butter.

Bake

Bake the cake in the preheated oven for around 40-45 minutes until the apples are soft and slightly caramelised.

Leave to cool

Remove the cake from the oven and leave to cool slightly before serving. Optionally dust with icing sugar.


Tip

Serve the cake with a scoop of vanilla ice cream or a dollop of whipped cream for a special flavour experience.
