Bruschetta with tomatoes

Fresh bread, juicy tomatoes, a hint of garlic and basil - an Italian classic that never disappoints.



Ingredients (for 4 portions):

  • 4 slices of ciabatta or baguette
  • 3-4 ripe tomatoes, finely diced
  • 1 clove of garlic, halved
  • 2 tbsp olive oil (extra virgin)
  • 1 handful of fresh basil leaves, chopped
  • Salt and pepper to taste

Preparation:

Prepare the bread

Toast the bread slices in a hot pan, on the grill or in the toaster until golden brown and crispy

Rub the garlic

Rub the toasted bread slices with the cut side of the halved garlic clove to give them a subtle garlic flavour.

Prepare the tomato mixture

Place the diced tomatoes in a bowl. Mix with olive oil, basil, salt and pepper.

Topping

Spread the tomato mixture generously over the toasted slices of bread.

Serving

Serve the bruschetta immediately to keep the bread crispy. Optionally, drizzle with an extra drizzle of olive oil.


Tip

For a special flavour, you can add a dash of balsamic vinegar to the tomato mixture or top the bruschetta with grated Parmesan
